Chicken Provençale
This crispy roast chicken smells amazing while in the oven and never disappoints once served up on your plate. It's also a small amount of work for a fantastic return. Serve as the main course at your next dinner party or perfect that simple weekday meal for the entire family.
Ingredients
- 2 lbs chicken legs with thighs
- 8 oz. cherry tomatoes, halved or keep them whole
- (½ cup) black or Kalamata olives, pitted
- 2 tbsp olive oil
- 5 garlic cloves, sliced
- 1 tbsp dried oregano or dried sage
- salt and pepper to taste
- Serve with an easy side salad.
- 4 cups romaine lettuce
- ¼ lemon, zested
- ½ cup mayonnaise
- 1 tsp paprika
- salt and pepper to taste
