Chicken Provençale
 
This crispy roast chicken smells amazing while in the oven and never disappoints once served up on your plate. It's also a small amount of work for a fantastic return. Serve as the main course at your next dinner party or perfect that simple weekday meal for the entire family.
Ingredients
  • 2 lbs chicken legs with thighs
  • 8 oz. cherry tomatoes, halved or keep them whole
  • (½ cup) black or Kalamata olives, pitted
  • 2 tbsp olive oil
  • 5 garlic cloves, sliced
  • 1 tbsp dried oregano or dried sage
  • salt and pepper to taste
  • Serve with an easy side salad.
  • 4 cups romaine lettuce
  • ¼ lemon, zested
  • ½ cup mayonnaise
  • 1 tsp paprika
  • salt and pepper to taste
