Ingredients
- Chicken breast or thighs, diced 1.5 lbs
- Olive oil or butter 2 Tbsp
- Onion, chopped 1 medium
- Garlic, minced 3 cloves
- Green bell pepper, chopped 1
- Chicken broth (no sugar added) 2 cups
- Canned pumpkin puree (unsweetened) 1 cup
- Diced tomatoes, no sugar added 1 can (14.5 oz)
- Chili powder 2 Tbsp
- Ground cumin 1 Tbsp
- Smoked paprika 1 tsp
- Sea salt & black pepper to taste
- Jalapeño or chili flakes (optional) as desired
- Heavy cream (optional) ¼ cup
- Fresh cilantro, chopped (garnish) as desired
- Shredded cheddar or Monterey Jack (optional) as desired
Instructions
- In a large pot, heat oil/butter over medium heat. Sauté onion & bell pepper until softened (~5 min).
- Add garlic; cook 1 min.
- Add chicken; cook until mostly browned.
- Stir in chili powder, cumin, paprika, salt & pepper. Add diced tomatoes and broth. Bring to simmer.
- Stir in pumpkin puree. Cover and cook 45-60 min, stirring occasionally, until chicken is tender.
- Optional: stir in heavy cream near end for creaminess.
