Ingredients
  • Chicken breast or thighs, diced 1.5 lbs
  • Olive oil or butter 2 Tbsp
  • Onion, chopped 1 medium
  • Garlic, minced 3 cloves
  • Green bell pepper, chopped 1
  • Chicken broth (no sugar added) 2 cups
  • Canned pumpkin puree (unsweetened) 1 cup
  • Diced tomatoes, no sugar added 1 can (14.5 oz)
  • Chili powder 2 Tbsp
  • Ground cumin 1 Tbsp
  • Smoked paprika 1 tsp
  • Sea salt & black pepper to taste
  • Jalapeño or chili flakes (optional) as desired
  • Heavy cream (optional) ¼ cup
  • Fresh cilantro, chopped (garnish) as desired
  • Shredded cheddar or Monterey Jack (optional) as desired
Instructions
  1. In a large pot, heat oil/butter over medium heat. Sauté onion & bell pepper until softened (~5 min).
  2. Add garlic; cook 1 min.
  3. Add chicken; cook until mostly browned.
  4. Stir in chili powder, cumin, paprika, salt & pepper. Add diced tomatoes and broth. Bring to simmer.
  5. Stir in pumpkin puree. Cover and cook 45-60 min, stirring occasionally, until chicken is tender.
  6. Optional: stir in heavy cream near end for creaminess.
