Ingredients
Chicken breast or thighs, diced 1.5 lbs
Olive oil or butter 2 Tbsp
Onion, chopped 1 medium
Garlic, minced 3 cloves
Green bell pepper, chopped 1
Chicken broth (no sugar added) 2 cups
Canned pumpkin puree (unsweetened) 1 cup
Diced tomatoes, no sugar added 1 can (14.5 oz)
Chili powder 2 Tbsp
Ground cumin 1 Tbsp
Smoked paprika 1 tsp
Sea salt & black pepper to taste
Jalapeño or chili flakes (optional) as desired
Heavy cream (optional) ¼ cup
Fresh cilantro, chopped (garnish) as desired
Shredded cheddar or Monterey Jack (optional) as desired
Instructions
In a large pot, heat oil/butter over medium heat. Sauté onion & bell pepper until softened (~5 min).
Add garlic; cook 1 min.
Add chicken; cook until mostly browned.
Stir in chili powder, cumin, paprika, salt & pepper. Add diced tomatoes and broth. Bring to simmer.
Stir in pumpkin puree. Cover and cook 45-60 min, stirring occasionally, until chicken is tender.
Optional: stir in heavy cream near end for creaminess.
