KETO STUFFED PEPPERS

This is a great easy recipe for an easy to make meal that tastes fantastic. You can make these the night before for dinner and then reheat them the next day for lunch.

KETO STUFFED PEPPERS

Ingredients

  • stuffed peppers
  • ½ onion
  • 2 tomatoes
  • 1 cup beef broth
  • 2 cups tomato paste
  • 2 garlic cloves
  • Handful of fresh parsley
  • 1 cup zucchini noodles
  • 8 ounces sausage
  • 16 ounces ground beef
  • 1 cup parmesan cheese
  • 1 egg
  • ¼ cup cream cheese 4 bell peppers
  • Sauce:
  • Combine: 2 cups tomato paste, 1 cup beef broth, 2 tomatoes diced, ½ cup cream cheese, simmer sauce on low heat until cream cheese is melted.
  • Filling: Filling:
  • Combine: 4 ounces of sausage browned. 16 ounces of ground beef browned with salt, pepper, and garlic cloves. ½ onion diced, handful of fresh chopped parsley, 1 egg, 1 cup zucchini noodles chopped, 1 cup of parmesan cheese.

Instructions

  • Cut bell peppers into halves (makes 8). Place into baking pan. Stuff peppers with filling. Pour sauce over peppers. Top with parmesan cheese. Bake in oven 375 degrees for 35-45 minutes.
