Ingredients
  • Almond Crust
  • 2 cups finely blanched almond flour
  • ⅓ cup granulated monk fruit sweetener
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Lemon Cheesecake Filling
  • 24 ounces cream cheese, softened
  • ¾ cup powdered monk fruit sweetener
  • 2 large eggs
  • 1 large egg yolk
  • ¼ cup sour cream
  • 2 tablespoons heavy cream
  • Zest of 2 lemons
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • Blueberry Layer
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest
Instructions
  1. Preheat the oven to 325°F. Line an 8x8-inch baking pan with parchment paper, leaving enough overhang to lift the bars out after chilling.
  2. In a medium bowl, combine the almond flour, monk fruit sweetener, cinnamon, and salt. Stir in the melted butter and vanilla until the mixture resembles damp sand.
  3. Press the crust evenly into the prepared pan. Bake for 10–12 minutes, or until lightly golden. Allow the crust to cool while preparing the filling.
  4. In a large mixing bowl, beat the softened cream cheese until completely smooth. Add the powdered sweetener and continue mixing until creamy.
  5. Mix in the eggs and egg yolk one at a time, scraping the bowl after each addition. Blend in the sour cream, heavy cream, lemon zest, lemon juice, vanilla, and salt until silky smooth.
  6. Pour the filling over the cooled crust and smooth the top with a spatula.
  7. Scatter the fresh blueberries evenly over the cheesecake. Gently press them just slightly into the batter and sprinkle with the additional lemon zest.
  8. Bake for 28–32 minutes, or until the edges are set and the center still has a slight jiggle.
  9. Turn off the oven, crack the door open, and let the cheesecake cool inside for 20 minutes.
  10. Cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
  11. Lift the cheesecake from the pan using the parchment paper and cut into 16 bars with a warm, clean knife.
