Lemon Garlic Butter Chicken with Asparagus

Serves: 2-3
- 2 large chicken breasts (or 4 thighs for higher fat)
- 1 bunch asparagus, trimmed
- 3 tbsp butter
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 lemon (zest and juice)
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- Optional: grated parmesan, fresh parsley
- Slice chicken breasts in half lengthwise. Season with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil and 1 tbsp butter in a skillet over medium high heat.
- Sear chicken 4 to 5 minutes per side until golden. Remove and set aside.
- Lower heat to medium. Add remaining butter and garlic. Cook 30 to 60 seconds.
- Add asparagus and sauté 3 to 5 minutes until tender crisp.
- Stir in lemon zest and juice.
- Return chicken to pan. Spoon sauce over top and cook 2 to 3 minutes.
- Optional: top with parmesan and parsley before serving.
