Lemon Garlic Butter Chicken with Asparagus

Ingredients
  • 2 large chicken breasts (or 4 thighs for higher fat)
  • 1 bunch asparagus, trimmed
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zest and juice)
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • Optional: grated parmesan, fresh parsley
Instructions
  1. Slice chicken breasts in half lengthwise. Season with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil and 1 tbsp butter in a skillet over medium high heat.
  3. Sear chicken 4 to 5 minutes per side until golden. Remove and set aside.
  4. Lower heat to medium. Add remaining butter and garlic. Cook 30 to 60 seconds.
  5. Add asparagus and sauté 3 to 5 minutes until tender crisp.
  6. Stir in lemon zest and juice.
  7. Return chicken to pan. Spoon sauce over top and cook 2 to 3 minutes.
  8. Optional: top with parmesan and parsley before serving.
