In a large pan, heat olive oil over medium-high heat. Add cauliflower rice and cook for 5–7 minutes, stirring occasionally, until lightly golden and moisture has evaporated. Season lightly with salt.
Cook the Vegetables
Using the same pan or a separate skillet:
Sauté mushrooms for 4–5 minutes until browned
Add zucchini and cook 2–3 minutes until just tender
Add spinach last and cook until just wilted
